Classic Chicken Cutlets

  • 4 thin chicken cutlets
  • Salt and black pepper
  • ¾ cup all-purpose flour
  • 2 large eggs, beaten
  • 1½ cups seasoned breadcrumbs
  • Neutral oil for shallow frying
  • Lemon wedges, to serve

LOAD THE STATION

FLOUR → EGG → BREADCRUMBSOpen The Cutlet Station and remove the three trays. Add flour to the flour tray, beaten eggs to the egg tray, and seasoned breadcrumbs to the largest breadcrumb tray. Arrange them in the Station’s flour → egg → breadcrumbs sequence before handling the chicken.

THE ACTION

  1. Pat the cutlets dry and season both sides. Keep the raw chicken on a separate plate beside the loaded Station.
  2. Using The Cutlet Station, coat each cutlet in the flour tray and shake off the excess. Move it into the egg tray, let the extra egg drip away, then press it into the breadcrumb tray until evenly covered.
  3. Transfer each breaded cutlet to a clean plate—never back to the raw-chicken plate. Heat a shallow layer of oil over medium-high heat and fry in batches until crisp, golden, and the chicken reaches 165°F.
  4. Drain briefly on a rack or paper towel. Season while hot, serve with lemon, discard leftover coatings that contacted raw chicken, and wash the removable trays and Station.

Crisp Schnitzel

  • Salt and black pepper
  • ¾ cup all-purpose flour
  • 2 large eggs
  • 1½ cups fine plain breadcrumbs
  • Neutral oil for shallow frying
  • Lemon and parsley, to serve

LOAD THE STATION

FLOUR → EGG → BREADCRUMBSOpen The Cutlet Station and place the removable trays in flour → egg → breadcrumbs order. Fill the flour tray with flour, the egg tray with beaten eggs, and the largest tray with fine breadcrumbs. The organized sequence helps keep the delicate schnitzel coating light and even.

THE ACTION

  1. Pound the cutlets to an even thinness, pat dry, season, and keep them on a separate raw-food plate.
  2. Move each cutlet through The Cutlet Station: lightly dredge in the flour tray, coat in the egg tray, then lay it in the breadcrumb tray. Turn once and coat without packing the crumbs down.
  3. Place the breaded schnitzel on a clean plate. Fry in hot oil until puffed, deeply golden, and safely cooked through, turning once.
  4. Drain, season, and finish with lemon and parsley. Discard coatings exposed to raw meat and wash all removable trays and the Station after use.

Crispy Eggplant

  • 1 large eggplant, sliced into ½-inch rounds
  • Salt
  • ¾ cup all-purpose flour
  • 2 large eggs, beaten
  • 1½ cups Italian-style breadcrumbs
  • Neutral oil for frying
  • Marinara and grated Parmesan, optional

LOAD THE STATION

FLOUR → EGG → BREADCRUMBSWhile the salted eggplant rests, open The Cutlet Station and remove the trays. Add flour to the flour tray, beaten eggs to the egg tray, and Italian-style breadcrumbs to the largest breadcrumb tray, following flour → egg → breadcrumbs.

THE ACTION

  1. Salt the eggplant slices and let them stand for 20 minutes. Blot away the released moisture so the coating can adhere.
  2. Bread each round in The Cutlet Station: cover both sides in the flour tray, dip in the egg tray, then press gently into the breadcrumb tray. Place finished rounds on a clean plate or rack.
  3. Fry in batches until the centers are tender and the coating is crisp and golden.
  4. Drain and serve as-is, with marinara, or build into eggplant Parmesan. Discard used coatings and wash the removable trays and Station after breading.

Panko Shrimp

THE CAST

  • 1 pound large shrimp, peeled and deveined
  • Salt and black pepper
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1½ cups panko breadcrumbs
  • Neutral oil for frying
  • Lemon and dipping sauce, to serve

LOAD THE STATION

FLOUR → EGG → BREADCRUMBSOpen The Cutlet Station and load the three removable trays in order: flour in the flour tray, beaten eggs in the egg tray, and panko in the largest breadcrumb tray. Keep the raw shrimp on a separate chilled plate until you are ready to bread them.

THE ACTION

  1. Pat the shrimp very dry and season lightly.
  2. Move each shrimp through The Cutlet Station: dredge in the flour tray, dip in the egg tray, and press gently into the panko tray. Keep the tails clean if left attached, then place the coated shrimp on a clean plate.
  3. Fry in small batches until crisp, curled, opaque, and cooked through, about 2–3 minutes depending on size.
  4. Drain, season immediately, and serve with lemon and your preferred sauce. Discard coatings that contacted raw shrimp and wash the removable trays and Station thoroughly.
PRODUCTION NOTE

Cooking times vary with thickness, pan, and heat. Use safe handling practices and verify doneness—especially for poultry, pork, seafood, and egg.
